Tucked away in Auckland, Bodega has quickly earned a loyal following for its stacked deli classics and warm hospitality. Behind the counter are three friends—Bryan, Nick, and Sean—who bring their own personalities and passions into the mix, whether that’s spinning Sade on the floor, finding inspiration at the skatepark, or debating the perfect sandwich for a sunny day.
Ahead, we chat with the trio to talk about their favourite albums, strange hospo highs and lows, birthday trips to the beach, and the advice they’d give anyone chasing the restaurant dream.

BRYAN, NICK & SEAN - DRESSED IN BEACH BRAINS
What is your favourite album to listen to while you work?
Bryan: It really depends on the day and what section I’m in, if I’m on there floor maybe the best of Sade, gotta have something to suit the atmosphere and that I'm keen to listen to as well. If I'm in the kitchen maybe yellow tape by Key Glock. Honourable mention would be Balu Brigadas new album; Portal.
Who/where/what are you finding the most inspiration from right now?
Sean: The bakery's over in AUS are constantly pushing the envelope, definitely finding a lot of inspiration from there. I think with life being so hectic all the time, the place I find the most inspiration is down in Papamoa at my mums crib, being out of the city is good for my brain. As for the what, it's probably being back on the skateboard.

What's your go to sandwich?
Nick: If its a sunny day then a classic deli Italian sandwich all day, if its a bit colder out something like a chicken parm or chopped cheese is the ticket.
When was the last time you went to the beach? Tell me about that day.
Bryan: My partner took me to the mount for my birthday at the end of march and we got a blue bird day, the main beach was absolutely packed, the water was still warm and you could hear joy and happiness in the air. We punched a 6 pack and fell asleep right before sunset. it was pretty magical.
What's the best and worst thing about working in hospo?
Sean: The best and worse thing is probably the people. You meet some amazing ones and serve some awful ones but it’s all part of the game. And maybe the hours.. the hours can suck.

What's something you wish you had more time to do and why?
Collectively: We all would like more time to see our family and friends, travel and just relax but that is the nature of the beast when you're in the hospo game.
Who (living or dead) would you like to cook for the most?
Nick: Anthony Bourdain.
When you’re not working, where are you most likely to be found?
Sean: Somewhere split between the skatepark, my couch and drinking a beer in the sun.
What’s a habit you’ve been trying to break and why?
Nick: Smoking is the one, its also the only way to get through the hard days sometimes haha.
Any advice for people who want to get started in the restaurant business?
Bryan: I would say find something that sets you apart and back your product. Don’t focus on what other people are doing and just back yourself. Also be prepared to work a fuck load for free in the early days. Hospo is a huge hustle but if done right can be so rewarding.
